- Place apples, lemon juice and sugar in a bowl and mix.
- Heat butter in a large skillet and add apples with all juices from the bowl.cook stirring often until apples are tender but hold their shape.
- Add cinnamon.,flour and salt, stir just to combined and scrape into a bowl and cool compleatly. Can be made up to 2 days in advance, keep refrigerated.
- Make eggrplls.
- Lay egg roll wrappers flat. Brush edges with egg wash.
- Place some apple filling on one end.
- Fold over sides.
- Roll up to compleatly enclose fillimg.
- Heat oil to cover 2 eggrolls m cook 2 at a time to 350. A Dutch oven works well. Fry in pairs until golden..
- Drain on racks but sprinkle with cinnamon sugar while hot.
- Serve with ice cream while hot. Drizzle with caramel sauce.
